Hi Guys! So I really love to cook and I am always trying to find fun and sometimes easy recipes. Pinterest is one of my favorite go-to apps because it has so many amazing recipes to choose fun. The great part about Pinterest is that you can type in the search bar what type of recipe you are looking for. Perhaps you want a new pasta dish or something super healthy, maybe you are in the mood for baking.
Recently I was in the mood for a pie, but with such a busy schedule, I didn’t have a whole lot of time for anything that took long. I was looking for something with easy ingredients, something that wasn’t time-consuming, and I honestly wanted something I didn’t have to bake. Which is when I came across a super easy recipe for a Key-lime pie.
With Easter coming up and Spring was filling the air, I really wanted to bake something to get into the festive spirit. But sometimes your schedule can get a bit hectic and you don’t really have all the time in the world to bake. Therefore, as I was scrolling through Pinterest (Lifesaver!) I came across an easy to make yet still delicious Key Lime Pie recipe. I love Pie, who doesn’t like pie? Something about Spring pies just screams refreshing. I have made Pumpkin Pie and Lemon Pie before but I have never made a Key Lime Pie. So I decided to make the Key Lime Pie and I was really excited about it.
I wanted to share with you all this super easy recipe and the steps I took in order to make it. The great part about this recipe is that you don’t have to use a whole lot of ingredients– hence, the easy part. But it is still considered homemade and it still tastes just as good as if you made everything from scratch.
To begin you will want to whisk together the lime gelatin into boiling water and stir until it dissolves. (I heated the water up in a microwavable bowl just to make it easier). Then, you add the Key Lime Pie or lime juice (freshly squeezed or bottled). Let the gelatin mixture cool down.
Once it has cooled, add the two Key Lime Pie yogurts.
Add one container of COOL WHIP and green food coloring, if desired. The food coloring was something I decided to add in the end because I thought it made a nice touch considering it was Easter and looked more Spring fitting.
Next, you will want to spoon the mixture into the Graham cracker crust and then smooth it all out. Place in the refrigerator to set for at least 2 hours. Since I didn’t start mine until almost 3 in the afternoon, I let mine set in the fridge until the next day– where I felt it was completely ready.
Once it was set (the next day), I then trimmed it with whip cream (can) and then top it with lime peels to make a cute little decoration.
This is the finishing touch! I have always loved pie and found Key Lime Pie to be extremely refreshing. It was easy to make yet still turned out to be really good which is always a plus. Sometimes we don’t always have the time to bake but if you find an easy enough recipe then go for it!
I love Spring because it has all the wonderful bright colors and the desserts are really fun to make.

¼ cup water (boiling)
.3 oz package lime flavored gelatin
2 tsp key lime juice (freshly squeezed or bottled)
(2) 6 oz containers of key lime pie flavored yogurt
(2) 8 oz containers of thawed COOL WHIP Whipped Topping (It calls for two but I only used one & substituted the second one for whip cream can)
1 prepared graham cracker crust (9 oz)
Green food coloring (optional)
Lime for curls (optional)
*Note – you can use lime juice if you can’t find key lime juice
1. Whisk lime gelatin into boiling water and stir until dissolved.
2. Add the key lime juice.
3. Once the gelatin mixture has cooled, add the key lime pie yogurt.
4. Add an 8oz container of COOL WHIP and green food coloring, if desired.
5. Spoon mixture into graham cracker crust and smooth out. Place in the refrigerator to set for at least 2 hours. (or until the next day)
6. I just peeled pieces from a lime and sprinkled them on top but you can also add a lime curl. To make a lime curl, cut a thin slice of a lime and then cut off the green part of the peel.
7. Add whip cream on top lined with little flowers and then sprinkle or add lime curl on top of each.
8. Then serve!
